Summary: Randomized crossover trial in 30 adults with metabolic syndrome (mean age 49) following a plant-based diet for 13 weeks, then randomized to a 4-week breakfast of 70 g spinach with either 2 whole eggs or an equivalent egg substitute (2-week no-egg/no-spinach washout between arms). Egg breakfast produced lower body weight and higher HDL-cholesterol than the substitute; plasma choline and zeaxanthin rose only with the egg arm. A companion paper from the same trial covers oxidative-stress/inflammation outcomes (Nutrients 2022;14(12):2548) and is not separately minted.
